Here are 2 books that have great ideas and recipes for using veggies as part of everyday meals. The recipes provide ways to use healthy vegetables and replace grains, such as wheat, within the food we eat for snacks and meals. I've used spaghetti squash for noodles. But, who knew you could also use zucchini or beets for noodles. The Spiralizer Cookbook has over 90 veggie recipes, including a recipe for sweet potato fries. The Inspiralized – Turn Vegetables into Healthy Meals book lists the nutritional value of each vegetable and how best to use each vegetable.
If you are looking to become gluten-free or try the Paleo diet, these books would be an asset. To get started you will need a machine capable of spiralizing veggies or an adapter for a kitchen appliance such as a KitchenAid.
